Chef PJ Calapa

Chef PJ Calapa’s appreciation for diverse cuisines and bold flavors began in his hometown of Brownsville, Texas—a vibrant community on the Mexican border. As a child, he spent countless hours cooking alongside his grandmother and later gained early hands-on experience working for his grandfather’s wholesale fish business. While pursuing his undergraduate degree at Texas A&M University, Calapa continued to nurture his passion for cooking, working the hot line at Christopher’s World Grille and setting the foundation for his professional culinary career.

After graduating, Calapa moved to New York to attend the Culinary Institute of America (CIA) in Hyde Park. Following his studies at the CIA, he honed his craft in some of the city’s most acclaimed kitchens, including Bouley in Tribeca, Eleven Madison Park, and Nobu 57. It was at Nobu 57 that Calapa developed a deep appreciation for the precision and balance of Japanese cuisine, an influence that continues to shape his approach to fine dining today.

In 2010, Calapa joined Altamarea Group, working alongside Chef Michael White to help launch Ai Fiori, which earned three stars from The New York Times, a Michelin star, and a 2013 StarChefs Rising Star Chef Award. He later served as Executive Chef for Costata, Campagna and The Barn at Bedford Post Inn, further establishing his reputation for refined technique and dynamic leadership in the kitchen. In 2016, Calapa departed Altamarea Group to bring two new restaurant concepts to life: The Spaniard and Scampi.

In 2023, Calapa rejoined Altamarea Group, where he continues to lead with vision and precision as Executive Chef of Marea New York and Marea Beverly Hills, overseeing menu development and kitchen operations across the brand’s U.S. locations. In December 2025, he extended that legacy to new altitudes with the opening of Marea Aspen, located within The St. Regis Aspen Resort.
